- employee safety, welfare, wellness and health;
- estimate food consumption and requisition food;
- select, develop and plan recipes;
- establish presentation technique and quality standards;
- ensure proper equipment operation / maintenance;
- oversee special catering events;
- schedules and coordinates the work of chefs, cooks and other kitchen employees;
- ensure food preparation is economical, technically correct and within budget;
- ensure that high standards of sanitation, cleanliness and safety are maintained in the kitchen;
- establish controls to minimize food and supply waste and theft;
- prepares necessary data for applicable parts of the budget, projects annual costs;
- develop policies and procedures to enhance and measure quality;
- establish and maintain regular cleaning and maintenance schedules for kitchen equipment
